It seems we’ve posted a succession of warming but carb-filled recipes. Not this one!
Instant Pot Tuscan Soup
2 pounds hot Italian sausage
1 onion, chopped
3 cloves garlic, minced
2 tsp oregano
1 cup stewed or fresh tomatoes, chopped
Salt and pepper
6 cups broth
1 bunch kale, chopped
¾ cup whipping cream
¼ cup grated Parmesan
Fresh parsley, chopped
Brown sausage in your Instant Pot on sauté mode. Drain excess fat.
Add garlic, onion, and oregano, and stir until translucent.
Add broth, tomatoes, salt, and pepper.
Change pressure to high and cook 5 minutes, then do a quick-release.
Change back to sauté, add kale, and cook briefly.
Add cream, stir until heated through.
Serve with Parmesan and parsley.
Add what you like best: cauliflower, caulirice, other veggies.
Of course you can make the same soup on the stovetop or in a crockpot. Add cream at just before serving.
