This will banish the blahs without taxing your pantry.

Celery and Apple Salad

Serves 4


8 celery ribs
½ cup celery leaves
1 red apple
½ cup red onion
1 TBSP vinegar
½ TBSP mustard, preferably something spicy
1 tsp maple syrup
½ tsp salt
3 TBSP oil
¼ cup shaved Parmesan cheese

Chop the celery ribs on the diagonal. Chop some of the leaves. Slice the apple and onion very thinly.

Toss in a mixture of  vinegar, mustard, syrup, salt, and oil.

Sprinkle with cheese.

Other additions:

Sesame or sunflower seeds, lightly roasted and salted
Fennel leaves (the tenderest new growth) or thin-sliced root
Mint, chopped
