One of the things that drew me to homesteading was the desire to be more responsible about my food—how it’s raised, how it’s processed, and how it ends up on the table. That means facing the whole cycle, not just the garden and the grill.
On June 29 from 1-4pm, we’ll be doing just that with a Rabbit Processing Demo and Open House at the Holler.

Come for the potluck, stay for the skills
We’ll kick things off at 1pm with a potluck meal—bring something to share. Anything goes. I’ll have something slow-cooking from our own Holler-raised meat, and drinks will include spring water, Iced Tea Of Northern Aggression (unsweet), and (as always) Holler Roast Coffee if the weather cooperates.
Processing Begins at 2pm
At 2pm, we’ll walk through a hands-on demonstration of humane rabbit processing—from dispatch to full breakdown. We’ll talk tools and technique but are relatively new to processing rabbits so this is why we are doing a free demo and not a paid class!
The Tactical Redneck and Knighthawk will lead the demo, and I’ll be around to answer questions about how we manage and cook rabbits here, as well as how they are a valuable augmentation to our feeding plan for the livestock guardian dogs.
Homestead Country Store + Community
Our tiny-but-growing country store will be open again with Holler Roast Coffee and a handful of handcrafted or homegrown goods from our local network. It’s humble now, but it’s part of a bigger plan to support the doers in our region. Stay tuned.
