Side dish or beefed up with extra protein, here’s a way to satisfy your craving for greens. We’re not Romaine purists: we use whatever greens mixture is on hand or growing outside.
Grilled Chicken Caesar Salad
1 pound chicken meat, in 1″ pieces
1 onion, in 2″ pieces
¾ cup Caesar salad dressing, divided
4 potatoes, blanched for 5 minutes, in 2″ pieces
½ tsp lemon juice
⅛ tsp pepper
Enough greens (Romaine is traditional)
¼ cup Parmesan cheese
Coat chicken, onion, and potatoes with salad dressing. Alternate ingredients on skewers.
Grill until done, turning occasionally.
Add lemon juice and pepper to remaining salad dressing and dress the greens.
Add a skewer or two to each salad.
Extra salad and skewer ingredients are recommended!
