Christmas Cheese Fritter

Once in awhile, it’s fun to indulge, and two of the traditional Christmas foods of Colombia qualify: natilla (a pudding) and buñuelo. See the the recipe for natilla next Monday.

Buñuelo Colombiano

Ingredients

Oil for frying
¾ cup cornstarch
¼ cup yucca flour or tapioca starch
1 cup crumbled feta cheese
½ cup finely grated Queso fresco or fresh farmer cheese
2 eggs
¼ tsp baking powder
2 TBSP sugar
Pinch salt
1 TBSP milk

Heat oil to 300°F.

Using your hands, mix all ingredients except oil until it becomes a soft dough.

Form small balls and fry, covered,  about 3 to 4 minutes. Turn the heat up and fry until golden brown.

Drain on a plate lined with paper towels and serve.

Some Spanish and Mexican buñuelos are sweet, akin to beignets.
