Are Your Tomatoes in Season?

So simple and so good when the tomatoes are still warm from the vine!

Picnic Tomato Salad

Ingredients

2 pounds tomatoes in ¼” slices
Salt and pepper
3 TBSP mayonnaise
1 TBSP fresh basil, chopped *
1 TBSP fresh oregano (or 1 tsp dried)
1 TBSP parsley, chopped
2 TBSP oil

Season tomatoes salt and pepper.

Spread each slice with a thin layer of mayonnaise. Arrange them in an overlapping layer on your serving plate.

Toss basil, oregano, and parsley, then scatter herbs over tomatoes and drizzle with oil.

* If you’re fresh out of fresh basil, start a new trend: try one of your other herbs, like dill, marjoram, fennel, …
