Once in awhile, you have to live high on the hog. How about a 10-minute warm lunch that looks and tastes far better than the time you spent to make it?
2 TBSP oil
1 ½ – 2 cups cherry tomatoes (halve them) or fresh tomato pieces
2 cups zucchini, spiralized
1 tsp paprika
Salt and pepper
1 cup mozzarella pieces
¼ cup fresh basil, sliced thinly
2 TBSP balsamic glaze
Sauté tomatoes and zucchini in oil just until wilted.
Remove from heat; stir in mozzarella and basil.
Season with salt and pepper.
Split into 4 bowls and drizzle with glaze.
