Adobo Seasoning

Ingredients

2 TBSP salt
1 TBSP paprika
2 tsp pepper
1 1/2 tsp onion powder (about 1 onion, diced, dried, and powdered – or chop and toss in a fresh onion when you cook with the seasoning)
1 1/2 tsp epazote (substitute oregano if you have no epazote)
1 1/2 tsp cumin
1 tsp garlic powder
1 tsp chili powder
10 bay leaves, crumbled (I powdered them.)

Mix and store as you would any herb or spice.

Now let’s use the mix.

Adobo

4 – 6 servings

Ingredients

3 – 4 pounds meat (chicken, pork, beef, venison, or a mixture of meats)
1/2 c vinegar
1/2 c soy sauce
1 c water
2 TBSP Adobo seasoning mix or:

  • 2 – 3 bay leaves, crushed
  • 2 tsp peppercorns
  • 4 garlic cloves
  • 1 onion, chopped
  • 3/4 tsp pepper
  • 2 tsp salt

Marinate meat 3 hours or more in vinegar, soy sauce, spices/herbs or adobo seasoning mix.

Cook 3 hours on high or 6 hours on low.

Serve with rice.
